Ingredients
  

  • 1 medium head red cabbage, finely sliced
  • 2 tablespoons butter
  • ½ cup water
  • ¼ cup apple cider vinegar or white vinegar
  • ⅓ cup granulated sugar
  • 1 medium apple, peeled and finely chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cinnamon
  • 2–3 whole cloves
  • 1 bay leaf
  • 2 tablespoons red currant jelly or cranberry sauce, optional

Instructions
 

Prepare the Cabbage

  • Remove any damaged outer leaves from the cabbage.
    Cut the cabbage into quarters, remove the tough core, and slice it into thin strips.
    Rinse and drain well.

Start the Cabbage

  • Melt the butter in a large heavy-bottomed pot over medium heat.
    Add the sliced cabbage and chopped apple.
    Stir well and cook for approximately 5 minutes, allowing the cabbage to begin softening.

Add the Sweet and Tangy Ingredients

  • Add the water, vinegar, sugar, salt, black pepper, cinnamon, cloves, and bay leaf.
    If using red currant jelly or cranberry sauce, add it at this stage.
    Stir everything together.

Simmer Slowly

  • Bring the mixture to a gentle simmer.
    Reduce the heat to low and cover the pot.
    Cook for approximately 45–60 minutes, stirring occasionally.
    The cabbage should become tender while still retaining some texture.

Adjust the Flavor

  • Remove the bay leaf and whole cloves.
    Taste the cabbage.
    Add a little more sugar if you prefer it sweeter or a small splash of vinegar if you want more acidity.
    Season with additional salt and pepper as needed.

Reduce the Liquid

  • If there is excess liquid, remove the lid during the final 5–10 minutes of cooking.
    Allow the cabbage to simmer until the liquid becomes slightly syrupy and coats the cabbage.

Rest Before Serving

  • Turn off the heat and let the cabbage rest for approximately 5–10 minutes.
    This allows the flavors to settle and become more balanced.

Serve

  • Transfer the warm cabbage to a serving bowl.
    Serve alongside roasted pork, pork belly, sausages, meatballs, ham, or other traditional-style Christmas dishes.
