Ingredients

For the Apple Filling

  • 6 medium apples, peeled and thinly sliced
  • ¼ cup (50 g) granulated sugar
  • 2 tablespoons (16 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • A small pinch of salt

For the Oatmeal Cookie Topping

  • 1½ cups (135 g) old-fashioned rolled oats
  • ¾ cup (95 g) all-purpose flour
  • ¾ cup (150 g) packed brown sugar
  • ½ cup (115 g) unsalted butter, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

Preheat the Oven

  • Preheat your oven to 180°C (350°F). Lightly grease a 9-inch square baking dish or a similarly sized oven-safe dish with butter.
Preparing the dish in advance helps prevent the apple filling from sticking and makes serving easier.

Prepare the Apples

  • Wash, peel, core, and slice the apples into evenly sized pieces, approximately ¼ inch thick.
Place them in a large mixing bowl. Add the granulated sugar, flour, cinnamon, lemon juice, vanilla extract, nutmeg, and a pinch of salt.
Toss everything together until the apple slices are evenly coated. The flour helps thicken the juices released by the apples during baking, while the lemon juice balances their sweetness.

Arrange the Apple Filling

  • Transfer the seasoned apples to the prepared baking dish. Spread them into an even layer, making sure there are no large gaps.
Pour any remaining cinnamon-sugar mixture from the bowl over the apples. This flavorful mixture will form a delicious sauce as the fruit cooks.

Prepare the Oatmeal Cookie Topping

  • In a separate bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt.
Add the melted butter and vanilla extract. Stir with a fork until the mixture forms moist, irregular crumbs.
The mixture should resemble a coarse oatmeal cookie dough crumble. If it appears too dry, check that the butter has been measured correctly. Avoid adding excessive liquid, as this can make the topping dense rather than crisp.

Add the Topping

  • Sprinkle the oatmeal cookie mixture evenly over the apples.
Leave some small clusters in the topping instead of pressing everything into a flat layer. These clusters develop a delicious crunchy texture as they bake.
For additional flavor, sprinkle a small handful of chopped pecans or walnuts over the crumble before placing it in the oven.

Bake Until Golden

  • Place the baking dish on the middle rack of the preheated oven. Bake for 35–45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.
If the topping browns too quickly before the apples soften, loosely cover the dish with aluminum foil for the remaining baking time.
To check the apples, carefully insert a small knife through the topping into the filling. The apples should be tender but not completely mushy.

Serve and Enjoy

  • Spoon the warm oatmeal cookie apple crisp into serving bowls. Add a scoop of vanilla ice cream, a spoonful of whipped cream, or a drizzle of caramel sauce if desired.
Serve immediately while the apples are warm and the topping retains its wonderful texture.

Notes

  • Choose suitable apples: Granny Smith apples provide a tart flavor, while Honeycrisp, Fuji, or Gala apples offer additional sweetness.
  • Slice evenly: Uniform apple slices cook more consistently and help prevent some pieces from becoming mushy while others remain firm.
  • Use old-fashioned rolled oats: These create a hearty, textured topping. Instant oats can produce a softer result.
  • Adjust the sweetness: If your apples are naturally sweet, reduce the granulated sugar slightly.
  • Do not skip the flour: A little flour in the filling helps absorb excess juice and creates a thicker apple sauce.
  • Keep the topping crumbly: Small clusters create a texture similar to oatmeal cookies and give the finished dessert an appealing appearance.
  • Rest before serving: Allowing the crisp to stand briefly helps the filling settle.
  • Refrigerate leftovers: Once cooled, cover and refrigerate the dessert for up to 4 days.
