  • 3 cups cooked short-grain or medium-grain rice, preferably chilled
  • 1 cup finely shredded cabbage
  • 3 green onions, thinly sliced
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 2 tablespoons neutral cooking oil

For the Toppings

  • 3 tablespoons okonomiyaki sauce
  • 3 tablespoons Japanese mayonnaise
  • 2 green onions, thinly sliced
  • 1 sheet nori, finely shredded
  • 2 tablespoons bonito flakes, optional
  • Pickled ginger, optional

Instructions
 

  • For the best crispy texture, use cold leftover rice. Break up any large clumps with your fingers or a fork.
  • Place the finely shredded cabbage in a large mixing bowl.
  • The cabbage should be sliced thinly so that it cooks quickly while still retaining a little texture.
  • Add the eggs, flour, cornstarch, soy sauce, sesame oil, garlic powder, and black pepper.
  • Mix gently until everything is evenly combined.
  • Avoid aggressively mashing the rice because keeping some individual grains intact gives the finished dish a better texture.
  • Shape each portion into a thick round patty, pressing firmly enough for the mixture to hold together.
  • Heat the cooking oil in a large nonstick skillet over medium heat.
  • Cook for approximately 5–7 minutes on the first side, without moving them too much. This allows a crisp golden crust to develop.
  • Carefully flip each patty and cook for another 4–6 minutes until both sides are golden brown and crispy.
  • Finish with sesame seeds, green onions, shredded nori, and bonito flakes if desired.
  • Serve while the rice is hot and crispy.
  • The contrast between the crunchy rice, tender cabbage, creamy mayonnaise, and sweet-savory sauce makes every bite delicious.

Notes

  • Cold rice works best: Chilled leftover rice contains less surface moisture and crisps more easily.
  • Use short-grain rice: It helps the patties hold together.

  • Use medium heat: Excessively high heat can burn the outside before the inside becomes hot.
  • Press gently: Firm patties hold together better, but avoid compressing them too heavily.
  • Adjust the cabbage: Extra cabbage gives a more pronounced okonomiyaki character.
  • Bonito flakes are optional: They add traditional okonomiyaki-style flavor but can be omitted.
  • Serve immediately: Crispy rice is best when freshly cooked.
