Ingredients
  

For the cake

  • 2 cups (250 g) all-purpose flour
  • 1½ cups (300 g) fresh rhubarb, chopped
  • ¾ cup (150 g) granulated sugar
  • ½ cup (113 g) unsalted butter, softened
  • 2 large eggs
  • ½ cup (120 ml) milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon flour, for coating the rhubarb if needed

For the topping

  • 1 tablespoon granulated sugar, optional
  • Powdered sugar, for dusting

Instructions
 

Prepare the rhubarb

  • Wash the rhubarb stalks, trim off the leaves and tough ends, and cut the stalks into small pieces about ½ inch long. Discard the leaves, as they are not edible.

Prepare the cake batter

  • Preheat the oven to 350°F (175°C). Grease and line an 8- or 9-inch round cake pan. Beat the softened butter and sugar until light and creamy.

Add the eggs and vanilla

  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined.

Combine the dry ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry mixture to the butter mixture in portions, alternating with the milk. Mix gently until just combined.

Fold in the rhubarb

  • Toss the chopped rhubarb with a tablespoon of flour if it is particularly juicy. Gently fold the rhubarb into the batter, distributing it evenly without overmixing.

Fill the cake pan

  • Transfer the batter to the prepared pan and spread it evenly. Sprinkle the optional tablespoon of sugar over the surface for a lightly crisp top.

Cool and serve

  • Allow the cake to cool in the pan for about 10–15 minutes, then transfer it to a rack. Once cooled, dust with powdered sugar, slice, and serve.

  • Choose fresh rhubarb: Firm, crisp stalks provide excellent flavor and texture.
  • Avoid excess moisture: If the rhubarb is very wet after washing, dry it before adding it to the batter.
