Ingredients
  

  • 4 boneless skinless chicken thighs (or breasts)
  • 1 cup long-grain white rice
  • 2 tablespoons butter
  • 4 cloves garlic (minced)
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • 2 tablespoons fresh parsley (chopped)

Instructions
 

  • Season the chicken with paprika, salt, and black pepper on both sides.
  • Heat olive oil in a large skillet or deep pan over medium-high heat.
  • Add chicken and cook for about 4–5 minutes per side until golden brown. Remove and set aside.
  • In the same pan, melt butter and add minced garlic and chopped onion.
  • Sauté for 1–2 minutes until fragrant.
  • Stir in the rice and cook for about 1 minute to lightly toast it.
  • Pour in chicken broth, thyme, and oregano. Stir well.
  • Place the chicken back into the pan on top of the rice. Cover and simmer on low heat for 20 minutes until rice is tender and chicken is fully cooked.
  • Sprinkle fresh parsley on top and serve warm with lemon wedges if desired.
