Ingredients
  

  • 12 oz (340 g) orecchiette pasta
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz (225 g) Italian sausage or pancetta
  • 1 cup cherry tomatoes, halved
  • 3 cups chicken or vegetable broth
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions
 

  • Heat olive oil in a large pan over medium heat.
  • Add onion, garlic, and sausage. Cook until golden brown.
  • Stir in cherry tomatoes and season with salt and pepper.
  • Add orecchiette pasta and pour in broth. Stir well.
  • Cover and cook until pasta is tender, about 15 minutes.
  • Add spinach and cook until wilted.
  • Mix in Parmesan and garnish with fresh basil before serving.

  • Use vegetable broth for a vegetarian version.
  • Replace sausage with mushrooms for a lighter option.
