- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 small onion, diced
- 3 cups chicken broth
- 12 ounces penne pasta
- 1 cup grated Parmesan cheese

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add diced chicken and season with half the Cajun seasoning, paprika, salt, and pepper. Cook until lightly browned.
Add sliced smoked sausage and cook for 3–4 minutes until slightly caramelized.
Stir in onions and garlic. Cook until fragrant and softened.
Pour in chicken broth and heavy cream. Stir well to combine.
Add uncooked penne pasta directly into the pot. Bring to a gentle boil, reduce heat, and simmer uncovered for 12–15 minutes until pasta is tender.
Reduce heat to low and stir in Parmesan and mozzarella cheese until melted and creamy.
Taste and add additional Cajun seasoning if desired.
Top with fresh parsley and extra Parmesan cheese before serving hot.
