  • 4 chicken thighs (bone-in or boneless)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 small onion (chopped)
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried thyme
  • ½ teaspoon oregano
  • 2 tablespoons chopped parsley

Instructions
 

  • Season the Chicken:
    Season the chicken with salt, pepper, and paprika on both sides.
  • Brown the Chicken:
    Heat olive oil in a large pot or skillet over medium heat. Add the chicken and cook for about 5 minutes per side until golden brown. Remove and set aside.
  • Cook Aromatics:
    In the same pot, add butter, garlic, and chopped onion. Sauté for about 2 minutes until fragrant.
  • Toast the Rice:
    Add the rice and stir for about 1 minute so it lightly toasts and absorbs the flavors.
  • Add Broth:
    Pour in the chicken broth and mix gently.
  • Simmer:
    Place the chicken back on top of the rice. Cover and cook on low heat for about 20 minutes until the rice is tender and chicken is cooked through.
  • Rest and Serve:
    Let the dish rest for 5 minutes. Garnish with parsley and serve warm.
