Ingredients
  

For the Chicken and Rice

  • 1½ pounds boneless, skinless chicken thighs or chicken breasts
  • 2 cups long-grain white rice, uncooked
  • 2½ cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 red bell pepper, diced
  • ½ small yellow onion, finely chopped
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Teriyaki Sauce

  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

For Garnish

  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • Fresh cilantro, optional
  • Red pepper flakes, optional

Instructions
 

Prepare the Chicken

  • Pat the chicken dry with paper towels.
    If using chicken breasts, cut them into large bite-sized pieces.
    If using chicken thighs, trim excess fat and cut them into similar-sized pieces.
    Season with salt and black pepper.

Make the Teriyaki Sauce

  • In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and brown sugar.
    In a separate small bowl, combine the cornstarch and cold water.
    Whisk until smooth.
    Add the cornstarch slurry to the teriyaki mixture and stir well.
    Set aside.

Sear the Chicken

  • Heat a large oven-safe Dutch oven or deep oven-safe skillet over medium-high heat.
    Add the olive oil.
    Place the chicken pieces into the pan and cook for approximately 3–4 minutes, turning occasionally.
    The goal is to lightly brown the outside rather than cook the chicken completely.
    Transfer the chicken to a plate.

Sauté the Aromatics

  • Reduce the heat to medium.
    Add the chopped onion and carrots to the same pot.
    Cook for approximately 3–4 minutes, stirring occasionally.
    Add the minced garlic and cook for another 30 seconds.

Add the Rice

  • Add the uncooked rice to the pot.
    Stir for approximately 1 minute to lightly toast the rice and coat it with the flavors in the pan.

Add the Broth and Teriyaki Sauce

  • Pour in the chicken broth.
    Add approximately three-quarters of the prepared teriyaki sauce.
    Stir gently to distribute everything evenly.

Cover and Bake

  • Preheat the oven to 375°F (190°C).
    Cover the pot tightly with an oven-safe lid or aluminum foil.
    Transfer it to the oven.
    Bake for approximately 30–35 minutes, or until the rice is tender and the chicken is completely cooked.

Check the Chicken

  • Use an instant-read thermometer to check the thickest piece of chicken.
    Chicken should reach 165°F (74°C) internally.
    If the rice needs additional time, cover the pot again and return it to the oven for another 5–10 minutes.

Finish with Teriyaki Sauce

  • Remove the casserole from the oven.
    If the remaining teriyaki sauce has thickened too much, warm it briefly and drizzle it over the finished casserole.
    Gently fluff the rice with a fork.

Rest

  • Cover the casserole loosely and let it rest for approximately 5–10 minutes.
    This allows the rice to finish absorbing moisture and makes the texture more evenly distributed.

Garnish and Serve

  • Sprinkle the casserole with sliced green onions and toasted sesame seeds.
    Add fresh cilantro or red pepper flakes if desired.
    Serve warm.

Notes

  • Rice: Long-grain white rice works particularly well because it cooks evenly without becoming excessively sticky.
  • Chicken: Chicken thighs provide a juicier result, while chicken breasts are leaner.
  • Broth: Low-sodium broth helps prevent the casserole from becoming overly salty.
