- 2 tablespoons olive oil or vegetable oil
- 4 boneless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1 teaspoon turmeric powder
- ½ teaspoon cumin powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- ½ cup peas or mixed vegetables
- Lemon wedges (for serving)
Heat oil in a large pot or deep skillet over medium heat. Season the chicken with salt and pepper. Add the chicken and cook for about 4–5 minutes on each side until golden. Remove from the pot and set aside.
In the same pot, add the chopped onion and cook for 2–3 minutes until soft. Stir in the garlic and cook for another minute until fragrant.
Add turmeric, cumin, and paprika to the pot and stir well. Add the rice and toast it lightly for about 1 minute so it absorbs the flavors.
Pour in the chicken broth and stir to combine.
Place the chicken back into the pot on top of the rice. Cover with a lid and simmer on low heat for about 20 minutes until the rice is tender.
Add peas or mixed vegetables during the last 5 minutes of cooking.
Sprinkle chopped cilantro or parsley on top and serve with fresh lemon wedges.
