Ingredients
  

For the Chicken

  • 1 kg chicken thighs and drumsticks, bone-in and skinless
  • 2 tablespoons vegetable oil
  • 400 ml full-fat coconut milk
  • 300 ml water or chicken stock
  • 2 bay leaves
  • 2 kaffir lime leaves, optional
  • 1 stalk lemongrass, bruised
  • 1 teaspoon salt, or to taste
  • ½ teaspoon ground white pepper

For the Spice Paste

  • 6 shallots, roughly chopped
  • 4 cloves garlic
  • 3 cm fresh ginger
  • 3 cm fresh galangal
  • 3 candlenuts, optional
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1–2 red chilies, optional
  • 2–3 tablespoons water, as needed for blending

For Garnishing

  • Fried shallots
  • Fresh cilantro or coriander leaves
  • Sliced red chili
  • Lime wedges, optional
  • Fresh cucumber

Instructions
 

Prepare the Chicken

  • Pat the chicken pieces dry with paper towels. Trim excess fat if desired.
    Bone-in chicken provides additional flavor to the coconut broth, although boneless pieces can also be used.

Make the Spice Paste

  • Place the shallots, garlic, ginger, galangal, candlenuts, coriander, cumin, turmeric, white pepper, and chilies into a food processor or blender.
    Add a small amount of water and blend into a smooth, aromatic paste.

Fry the Spice Paste

  • Heat the oil in a large heavy-bottomed pot over medium heat.
    Add the spice paste and cook for approximately 5–8 minutes, stirring frequently.
    Continue cooking until the paste becomes fragrant and the raw aroma disappears.

Add the Aromatics

  • Add the bruised lemongrass, bay leaves, and kaffir lime leaves if using.
    Stir for about 1 minute so their aromas are released.

Add the Chicken

  • Place the chicken pieces into the pot.
    Stir well to coat them completely with the spice mixture.
    Cook for approximately 5 minutes, turning the chicken occasionally.

Add Coconut Milk

  • Pour in the coconut milk and water or chicken stock.
    Add salt, sugar, and white pepper.
    Stir gently to combine.

Simmer Slowly

  • Bring the mixture just to a gentle simmer.
    Reduce the heat to low and cook uncovered or partially covered for approximately 35–45 minutes, stirring occasionally.
    Avoid vigorous boiling because high heat can cause coconut milk to separate excessively.

Adjust the Flavor

  • Taste the sauce and adjust the salt and sugar as needed.
    Opor ayam should have a harmonious savory, creamy, aromatic flavor rather than overwhelming heat.

Garnish and Serve

  • Transfer the chicken and coconut sauce to a serving bowl.
    Top with crispy fried shallots, fresh coriander, and sliced red chili.
    Serve hot with steamed rice or traditional ketupat.

Notes

  • Use bone-in chicken: It gives the coconut broth a deeper, richer flavor.
  • Don't boil aggressively: Gentle simmering helps keep the coconut milk smooth.
  • Fresh galangal is preferable: It provides an important Indonesian aromatic character.
  • Candlenuts are optional: They help thicken and enrich the sauce.
  • Control the chili: Traditional opor ayam is generally mild, but heat can be adjusted.
  • Use full-fat coconut milk: It creates a richer and creamier sauce.
  • Taste near the end: Coconut milk can soften the perception of salt and spices.
  • Serve hot: The sauce becomes thicker as it cools.
