Ingredients
  

  • 200 grms self-raising flour
  • 200 grms unsalted butter (softened)
  • 200 grms caster sugar
  • 4 large eggs
  • Zest of 2 oranges
  • 50 ml fresh orange juice
  • 1 tsp vanilla extract

For the Drizzle:

  • 100 grms icing sugar
  • 50 ml fresh orange juice

Instructions
 

  • Preheat your oven to 180°C (350°F) and grease a loaf tin.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in the eggs, one at a time, ensuring each is fully incorporated.
  • Add the orange zest, orange juice, and vanilla extract.
  • Gradually fold in the self-raising flour until well combined.
  • Pour the batter into the prepared loaf tin and smooth the top.
  • Bake for 35 minutes or until a skewer inserted in the center comes out clean.
  • While the cake is baking, mix icing sugar with fresh orange juice to create the drizzle.
  • Once baked, let the cake cool slightly before pouring the drizzle over the top.
  • Allow the cake to absorb the syrup before slicing and serving.

Notes

  • Ensure the cake is slightly warm when drizzling to allow for better absorption.
  • Use freshly squeezed orange juice for the best flavor.
