Ingredients
  

  • 1½ pounds red potatoes, cut into bite-sized pieces
  • 1 pound fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper or lightly grease it.
  • In a large bowl, toss red potatoes with 2 tablespoons olive oil, garlic, rosemary, thyme, salt, pepper, and paprika.
  • Spread potatoes evenly on the baking sheet.
  • Roast for 20 minutes, stirring once halfway through.
  • In a separate bowl, toss asparagus with the remaining olive oil and a pinch of salt.
  • Add asparagus to the baking sheet with the potatoes and roast for an additional 12–15 minutes until potatoes are golden and asparagus is tender.
  • Remove from oven, drizzle with lemon juice, sprinkle with Parmesan cheese and parsley, then serve immediately.
