Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 shallots, thinly sliced
  • 3 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • ½ cup chicken broth or white wine
  • 1 tbsp fresh thyme or parsley
  • Salt and black pepper to taste

Instructions

  • Season chicken breasts with salt and pepper.
  • Heat oil or butter in a skillet over medium-high heat.
  • Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  • In the same pan, sauté shallots and garlic until soft.
  • Deglaze with broth or wine, scraping browned bits for flavour.
  • Return chicken to skillet, simmer for 2 minutes, and garnish with herbs.
  • Serve hot with your favourite sides.

Notes

  • Use thin chicken breasts for even cooking.
  • Shallots provide a milder flavour than onions.
  • White wine adds depth but can be replaced with broth.
  • Do not overcrowd the skillet for best sear.
  • Fresh herbs enhance flavor more than dried.
