Ingredients
  

  • 12 oz yakisoba noodles (or dry chow mein noodles, cooked)
  • 2 tbsp vegetable oil
  • 1 cup cabbage, shredded
  • ½ cup celery, thinly sliced
  • ½ cup onion, sliced
  • 2 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce (for color, optional)
  • 1 tsp sugar
  • ½ tsp sesame oil
  • ½ tsp ground white pepper
  • 2 tbsp water (if needed to loosen the noodles)
  • Green onions for garnish (optional)

Instructions
 

  • Prepare the noodles: If using yakisoba noodles, rinse them under warm water to loosen. If using dry chow mein noodles, cook according to package instructions, drain, and set aside.
  • Sauté the vegetables: Heat vegetable oil in a large pan or wok over medium-high heat. Add onions, celery, and cabbage. Stir-fry for 2–3 minutes until softened.
  • Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
  • Stir in the noodles: Add the cooked noodles to the pan, tossing with the vegetables.
  • Make the sauce: In a small bowl, mix soy sauce, oyster sauce, dark soy sauce (if using), sugar, sesame oil, and white pepper.
  • Coat the noodles: Pour the sauce over the noodles and stir-fry for 2–3 minutes until evenly coated. Add water if needed to loosen the noodles.
  • Serve: Garnish with green onions and serve hot.

Notes

  • For the best results, use yakisoba noodles or fresh chow mein noodles.
  • Dark soy sauce gives the noodles a deep color but can be omitted.
  • To achieve the signature Panda Express smoky flavor, cook in a hot wok.
