- 12 oz yakisoba noodles (or dry chow mein noodles, cooked)
- 2 tbsp vegetable oil
- 1 cup cabbage, shredded
- ½ cup celery, thinly sliced
- ½ cup onion, sliced
- 2 cloves garlic, minced
- ¼ cup low-sodium soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce (for color, optional)
- 1 tsp sugar
- ½ tsp sesame oil
- ½ tsp ground white pepper
- 2 tbsp water (if needed to loosen the noodles)
- Green onions for garnish (optional)
Prepare the noodles: If using yakisoba noodles, rinse them under warm water to loosen. If using dry chow mein noodles, cook according to package instructions, drain, and set aside.
Sauté the vegetables: Heat vegetable oil in a large pan or wok over medium-high heat. Add onions, celery, and cabbage. Stir-fry for 2–3 minutes until softened.
Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
Stir in the noodles: Add the cooked noodles to the pan, tossing with the vegetables.
Make the sauce: In a small bowl, mix soy sauce, oyster sauce, dark soy sauce (if using), sugar, sesame oil, and white pepper.
Coat the noodles: Pour the sauce over the noodles and stir-fry for 2–3 minutes until evenly coated. Add water if needed to loosen the noodles.
Serve: Garnish with green onions and serve hot.
