For the Paneer
- 400 g paneer, cut into cubes
- 1 tablespoon oil
- 1 tablespoon butter or ghee, optional
For the Jalfrezi
- 1 tablespoon vegetable oil
- 1 teaspoon cumin seeds
- 1 medium green bell pepper, sliced
- 1 medium green bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 tablespoon ginger, julienned
- 4 garlic cloves, minced
- 1–2 green chilies, sliced
- ½ teaspoon turmeric powder
- 1 teaspoon ground coriander
- ½ teaspoon cumin powder
- 1 teaspoon garam masala
- ½ teaspoon amchur powder
- ¾ teaspoon salt, or to taste
- 2 tablespoons fresh coriander, chopped
- 2 tablespoons water, if needed
For Garnishing
- Fresh coriander
- Thinly sliced ginger
- Green chilies
- Lemon wedges
- A sprinkle of chaat masala, optional
Prepare the Paneer
Cut the paneer into medium-sized cubes.If the paneer is firm or refrigerated, soak the cubes in warm water for about 10 minutes. Drain and gently pat them dry.
Lightly Fry the Paneer
Heat 1 tablespoon oil in a large skillet over medium heat.Add the paneer cubes and lightly fry until the edges become pale golden. Avoid deep-frying or cooking them for too long because this can make the paneer chewy.Transfer the paneer to a plate and set aside.
Prepare the Jalfrezi Base
Heat another tablespoon of oil in the same skillet.Add cumin seeds and let them sizzle for a few seconds.Add sliced onions and stir-fry over medium-high heat until they become slightly softened but still retain some texture.
Add Ginger, Garlic and Chilies
Add ginger, garlic, and green chilies.Stir-fry for about 1 minute until fragrant
Add the Bell Peppers
Add the green, red, and yellow bell peppers.Cook over medium-high heat for approximately 3–4 minutes.The vegetables should become slightly tender while retaining a pleasant crunch.
Add the Spices
Add Kashmiri chili powder, turmeric, coriander powder, cumin powder, black pepper, and salt.Mix well and cook for 1–2 minutes.Add a small splash of water if the masala begins sticking to the pan.
Add Paneer
Return the lightly fried paneer to the skillet.Gently toss everything together so the paneer is evenly coated with the spicy vegetable masala.Cook for another 2–3 minutes.
Finish the Dish
Add garam masala and amchur powder.Mix gently and turn off the heat.Garnish with fresh coriander and julienned ginger.
Serve
Serve Paneer Jalfrezi immediately with naan, roti, paratha, jeera rice, or steamed basmati rice.Add a squeeze of lemon just before eating for extra freshness.
