- 1 cup matzo cake meal
- 1/2 cup potato starch
- 2 cups sugar (divided)
- 1 teaspoon cinnamon
- 6 large apples, peeled and sliced thin
- 4 large eggs
- 1 cup vegetable oil
- 1/4 cup orange juice
- 2 teaspoons vanilla extract
Preheat oven to 350°F (175°C). Grease a tube or bundt pan.
Mix apple slices with 1/2 cup sugar and cinnamon in a bowl. Set aside.
In a large bowl, beat eggs until light and fluffy.
Add remaining sugar, oil, orange juice, and vanilla. Mix well.
Gradually stir in matzo cake meal and potato starch until smooth.
Pour half the batter into the pan. Layer with half the apples. Repeat with remaining batter and apples.
Bake for 55–60 minutes until golden and a toothpick comes out clean.
Cool before removing from the pan. Serve plain or dusted with sugar.
