For the Pasta
- 12 ounces (340 g) bucatini, spaghetti, or linguine
- Salt, for boiling water
For the Sauce
- 1 pound (450 g) fresh sardines, cleaned and filleted (or high-quality canned sardines, drained)
- 3 tablespoons extra virgin olive oil
- 3 garlic cloves, minced
- 1 bunch wild fennel or 2 cups fresh fennel fronds, chopped
- ¼ cup raisins
- ¼ cup pine nuts
- 1 teaspoon saffron threads
- ¼ cup warm water
- 4 anchovy fillets, chopped (optional)
- Salt and freshly ground black pepper, to taste
For Garnish
- Toasted breadcrumbs
- Fresh parsley
- Lemon wedges
Soak the saffron threads in warm water for 10 minutes.
Bring a large pot of salted water to a boil and cook the pasta until al dente.
Reserve 1 cup of the pasta cooking water before draining.
Meanwhile, heat the olive oil in a large skillet over medium heat.
Cook the onions until soft and lightly golden, about 8 minutes.
Add the garlic and anchovies (if using), stirring until the anchovies dissolve.
Stir in the chopped fennel and cook for 3–4 minutes.
