- 4 large potatoes (Yukon Gold or similar)
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh parsley, finely chopped
- 1 clove garlic, minced
- Salt to taste

Peel the potatoes and cut them into bite-sized chunks.
Place the potatoes in a pot of cold salted water and bring to a boil.
Cook for about 15-20 minutes until the potatoes are fork-tender but not mushy.
Drain the potatoes and let them cool slightly.
In a bowl, mix the olive oil, minced garlic, chopped parsley, salt, pepper, and lemon juice (if using).
