Ingredients
  

  • 4 large potatoes (Yukon Gold or similar)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, finely chopped
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions
 

  • Peel the potatoes and cut them into bite-sized chunks.
  • Place the potatoes in a pot of cold salted water and bring to a boil.
  • Cook for about 15-20 minutes until the potatoes are fork-tender but not mushy.
  • Drain the potatoes and let them cool slightly.
  • In a bowl, mix the olive oil, minced garlic, chopped parsley, salt, pepper, and lemon juice (if using).
  • Gently toss the warm potatoes with the dressing until evenly coated.
  • Let the salad rest for a few minutes to allow the flavors to meld.
  • Serve warm or chilled, garnished with extra parsley if desired.

Notes

  • For added flavor, you can drizzle balsamic vinegar or add capers.
  • Avoid overcooking the potatoes to prevent them from becoming mushy.
