Ingredients
  

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1½ cups fresh peaches, peeled and diced

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper.
  • In a bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In another bowl, whisk melted butter and brown sugar until smooth. Add the egg and vanilla extract, mixing until fully combined.
  • Gradually stir the dry ingredients into the wet mixture until just incorporated.
  • Gently fold the diced peaches into the batter, taking care not to overmix.
  • Spread the batter evenly into the prepared pan. Bake for 30–35 minutes, or until the edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  • Allow the blondies to cool completely before cutting into squares.
  • Dust with powdered sugar or drizzle with vanilla glaze before serving, if desired.
