A delicious homemade Peach Crisp made with fresh peaches and a buttery oat crumble topping.

For the filling:
- 6 fresh peaches, sliced (or 4 cups canned/frozen peaches, drained)
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
For the topping:
- 3/4 cup rolled oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
In a large bowl, combine sliced peaches, sugar, lemon juice, cornstarch, cinnamon, and vanilla extract. Stir well and transfer to the prepared baking dish.
In another bowl, mix oats, flour, brown sugar, cinnamon, and salt.
Pour melted butter over the oat mixture and stir until it becomes a crumbly texture.
Evenly sprinkle the topping over the peaches.
Bake for 35-40 minutes or until the topping is golden brown and the peaches are bubbling.
Allow to cool for 10 minutes before serving.
Serve warm with vanilla ice cream or whipped cream.
- For a gluten-free version, use gluten-free oats and flour.
