Ingredients
  

  • 1½ pounds pork loin or pork tenderloin, cut into bite-sized pieces
  • 2 ripe peaches, sliced
  • 1 cup picante sauce
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the pork with salt, pepper, paprika, and cumin.
  • Cook the pork for 5–6 minutes until browned on all sides.
  • Add the onion and cook until softened.
  • Stir in the garlic and cook for one minute.
  • Pour the picante sauce into the skillet and stir well.
  • Add the sliced peaches and gently combine.
  • Reduce the heat and simmer for 10–12 minutes until the pork is fully cooked.
  • Stir in honey if a sweeter flavor is desired.
  • Garnish with cilantro and serve with lime wedges.
