Ingredients

  • 3 pounds ripe peaches
  • 4 cups granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest (optional)
  • ½ teaspoon unsalted butter (optional to reduce foam)

Instructions

  • Wash, peel, and pit the peaches. Chop them into small pieces.
  • Place the peaches into a large heavy-bottomed pot.
  • Add sugar and lemon juice. Stir well until combined.
  • Allow the mixture to rest for 20 minutes. The peaches will release their natural juices.
  • Bring the mixture to a gentle boil over medium-high heat.
  • Reduce the heat slightly. Stir frequently to prevent sticking.
  • Cook for 35–40 minutes until the preserves become thick.
  • Test the consistency on a chilled plate. If it wrinkles when pushed, it is ready.
  • Fill sterilized jars while the preserves remain hot.
  • Seal the jars and process them in a boiling water bath for 10 minutes if storing long-term.

Notes

  • Choose ripe yet firm peaches.
  • Fresh lemon juice improves flavor and preservation.
  • Avoid overcooking to maintain fruit texture.
  • Remove foam before filling jars.
  • Sterilize jars properly for safe storage.
  • Store unopened jars in a cool place.
  • Refrigerate after opening.
  • Consume opened preserves within three weeks.
