Ingredients

  • 1 cup quinoa (uncooked)
  • 2 ripe peaches (sliced)
  • 1/2 cucumber (chopped)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup fresh mint (chopped)
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and black pepper to taste

Instructions

  • Cook the Quinoa
Rinse quinoa under cold water to remove bitterness. Boil two cups of water, add quinoa, and simmer for 15 minutes. Once fluffy, let it cool.
  • Prepare the Dressing
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. This dressing brings brightness and a tangy twist.
  • Slice and Chop
Slice peaches, chop cucumbers, onion, and mint. Crumble the feta cheese and keep everything ready.
  • Combine and Toss
In a large bowl, add cooked quinoa, peaches, cucumbers, onion, and mint. Pour the dressing and toss gently to mix well.
  • Add the Final Touch
Top with feta cheese before serving. This adds a creamy and salty balance to the sweet peaches.

Notes

  • Cool Quinoa First: Let the cooked quinoa cool completely before mixing to prevent wilting the fresh ingredients.
  • Use Ripe Peaches: Choose peaches that are ripe but firm for the best texture and flavor balance.
  • Adjust Sweetness: If your peaches aren't very sweet, add a teaspoon of honey or maple syrup to the dressing.
  • Herb Variations: Fresh basil or cilantro can be used in place of mint for a different flavor twist.
  • Vegan Option: Omit feta or use plant-based cheese for a vegan-friendly salad.
  • Add Crunch: Toasted almonds, walnuts, or sunflower seeds can add extra texture and nutrition.
  • Make It a Meal: Add grilled chicken, tofu, or beans to turn this salad into a protein-packed entrée.
  • Storage Tip: Best served fresh, but you can refrigerate leftovers for up to 2 days. Keep dressing separate until ready to serve.
