- 2 cups fresh peaches, peeled and diced (or frozen peaches, thawed)
- 1 cup granulated sugar
- 1 cup water
- 1 tsp lemon juice (optional, for freshness)
In a medium saucepan, combine the diced peaches, sugar, and water.
Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
Reduce the heat to low and let the mixture simmer for 15-20 minutes, or until the peaches are soft and the syrup thickens slightly.
Use a fine-mesh strainer to strain the syrup into a clean bowl or jar, pressing gently on the peaches to extract as much liquid as possible.
Stir in the lemon juice for added freshness, if desired.
Allow the syrup to cool to room temperature before transferring it to an airtight container.
Store in the refrigerator for up to 2 weeks.
-
For a stronger peach flavor, let the syrup sit overnight in the refrigerator before straining.
-
Save the strained peach pulp to use as a topping for yogurt or ice cream.
