Ingredients
  

  • 2 cups fresh peaches, peeled and diced (or frozen peaches, thawed)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tsp lemon juice (optional, for freshness)

Instructions
 

  • In a medium saucepan, combine the diced peaches, sugar, and water.
  • Bring the mixture to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.
  • Reduce the heat to low and let the mixture simmer for 15-20 minutes, or until the peaches are soft and the syrup thickens slightly.
  • Use a fine-mesh strainer to strain the syrup into a clean bowl or jar, pressing gently on the peaches to extract as much liquid as possible.
  • Stir in the lemon juice for added freshness, if desired.
  • Allow the syrup to cool to room temperature before transferring it to an airtight container.
  • Store in the refrigerator for up to 2 weeks.

Notes

  • For a stronger peach flavor, let the syrup sit overnight in the refrigerator before straining.
  • Save the strained peach pulp to use as a topping for yogurt or ice cream.
