Ingredients
  

For the Tart Shells

  • 1½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup powdered sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • ¼ teaspoon salt

For the Vanilla Pastry Cream

  • 2 cups whole milk
  • ½ cup granulated sugar
  • 3 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter

Fruit Topping

  • 3 ripe peaches, thinly sliced
  • 1 teaspoon lemon juice (to prevent browning)

Garnish

  • Fresh mint leaves (optional)
  • Powdered sugar (optional)

Instructions
 

  • Combine the flour, powdered sugar, and salt in a bowl. Cut in the chilled butter until the mixture resembles coarse crumbs. Add the egg yolk and cold water, mixing until a dough forms. Wrap and chill for 30 minutes.
  • Preheat the oven to 375°F (190°C). Roll out the dough and line eight mini tart pans. Prick the bottoms with a fork and bake for 18–20 minutes, or until lightly golden. Cool completely.
  • Heat the milk in a saucepan until steaming. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch. Slowly whisk in the hot milk, then return the mixture to the saucepan. Cook over medium heat until thickened. Stir in the butter and vanilla extract. Cover with plastic wrap touching the surface and chill until cold.
  • Fill each cooled tart shell with the chilled pastry cream, smoothing the surface with a spoon or piping it for a more elegant presentation.
  • Fan the peach slices neatly over the pastry cream, slightly overlapping them for a decorative look.
  • Mix the apricot jam with warm water until smooth and brush lightly over the peaches to create a glossy finish.
  • Garnish with fresh mint leaves or a light dusting of powdered sugar and serve chilled.
