Ingredients
  

For the Shortcakes

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ cup cold unsalted butter, cubed
  • ⅔ cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 5 fresh peaches, peeled and sliced
  • ⅓ cup granulated sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract

For the Whipped Cream

  • 1½ cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • In a bowl, combine the sliced peaches, granulated sugar, lemon juice, and vanilla. Let them sit for 20 minutes to release their natural juices.
  • Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. In a separate bowl, whisk together the heavy cream, egg, and vanilla, then gently stir into the dry ingredients until a soft dough forms.
  • Divide the dough into 8 equal portions and place them on the prepared baking tray. Bake for 15–18 minutes, or until lightly golden. Allow them to cool slightly.
  • Beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Slice each shortcake in half. Spoon peaches and their juices onto the bottom half, add a generous layer of whipped cream, then place the top half over the filling. Finish with more peaches and whipped cream.
  • Decorate with fresh mint, powdered sugar, or toasted almonds. Serve immediately while the shortcakes are slightly warm.
