Ingredients
  

  • 1 Cup Unsalted Butter, softened
  • 1 Cup Granulated Sugar
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 1 Cup Smooth Peanut Butter
  • 1 Tbsp Vanilla Extract
  • 2 1/2 Cup All-purpose flour
  • 1 Tbsp Baking Powder
  • 1/2 Tbsp Salt

Instructions
 

  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the peanut butter and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the peanut butter mixture, mixing until just combined.
  • Roll the dough into 1-inch balls and place them on an ungreased baking sheet, leaving about 2 inches of space between each cookie.
  • Use a fork to gently press a crisscross pattern on top of each cookie, flattening them slightly.
  • Bake in the preheated oven for 10 to 12 minutes or until golden brown around the edges.
  • Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
