Ingredients

  • 6 large eggs
  • 1 can (15 ounces) sliced beets, including the liquid
  • 1 cup apple cider vinegar
  • ½ cup granulated sugar
  • ½ cup water
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 whole cloves, optional
  • 1 small cinnamon stick, optional

Instructions

  • Place the eggs in a saucepan and cover them with water. Bring the water to a gentle boil over medium-high heat.
Next, cover the saucepan, remove it from the heat, and let the eggs stand for 10–12 minutes. Transfer them immediately to an ice bath.
Once the eggs cool completely, peel them carefully. Rinse away any remaining shell fragments and set them aside.
  • Combine the apple cider vinegar, sugar, water, salt, and black pepper in a saucepan. Add the optional cloves and cinnamon stick for extra flavor.
Heat the mixture gently, stirring until the sugar dissolves completely. Then, remove the saucepan from the heat and let the brine cool.
Do not pour hot brine directly over the eggs. Allowing it to cool helps prevent unnecessary heating during assembly.
  • Place the peeled eggs and sliced beets in a clean glass container. Arrange the ingredients evenly to help the brine reach every egg.
Pour the cooled vinegar mixture over the ingredients. Add enough reserved beet liquid to cover everything completely.
If necessary, add a little water to maintain coverage. However, keep the original vinegar proportions unchanged for a consistent flavor.
  • Cover the container tightly and refrigerate it immediately. Allow the eggs to pickle for at least 24 hours.
For a deeper color and stronger flavor, wait 48 hours before serving. Turn the eggs gently if needed to encourage even coloring.
Never leave the eggs at room temperature while they pickle. Refrigeration is essential for food safety.
  • Remove the eggs from the refrigerator when you are ready to serve them. Slice them in half or quarters for an attractive presentation.
Arrange the eggs with the pickled beets on a serving platter. Finally, garnish with fresh parsley or a light sprinkle of black pepper.

Notes

  • Use fresh eggs for the best overall quality.
  • Cool the eggs completely before peeling them.
  • Choose a clean glass container with a tight-fitting lid.
  • Keep every egg and beet slice submerged in the brine.
  • Use canned beet liquid for a richer color.
  • Allow at least 24 hours for the flavors to develop.
  • Keep the container refrigerated throughout storage.
  • Prepare smaller batches to maintain freshness and quality.
