Ingredients

  • 1 can refrigerated biscuit dough or 1 cup pizza dough (store-bought or homemade)
  • ½ cup pizza sauce (plus extra for dipping)
  • 1 to 1½ cups shredded mozzarella cheese
  • ½ cup chopped peppers (bell peppers, jalapeños, banana peppers, or mixed)
  • ¼ cup chopped pepperoni (optional)
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil or melted butter (optional, for brushing)
  • Salt and black pepper to taste

Instructions

  • Preheat oven to 190°C (375°F). Grease a mini muffin tin (or line a baking tray).
  • Cut biscuit dough into halves/quarters (or portion pizza dough into small balls). Press each piece into the muffin cups to form a small “cup.”
  • Spoon a little pizza sauce into each cup.
  • Add mozzarella, then chopped peppers (and pepperoni if using).
  • Sprinkle Italian seasoning and parmesan on top.
  • Bake 12–15 minutes, until golden and bubbly.
  • Cool 3–5 minutes, then remove and serve warm with dipping sauce.

Notes

  • Mini muffin pans make the best bite-size shape and crisp edges.
  • Drain pickled peppers well to avoid soggy bites.
  • Use low-moisture mozzarella for better melt and less liquid.
  • Don’t overfill—cheese expands while baking.
  • Serve warm for the best cheesy pull.
