Ingredients
  

  • 3 lbs arm roast
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cups red wine (optional)
  • 4 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 3 large potatoes, peeled and quartered
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • Salt and pepper, to taste

Instructions
 

  • Prep the Roast:
    Pat the arm roast dry with paper towels. Season generously with salt and pepper on all sides.
  • Sear the Roast:
    Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned. Remove and set aside.
  • Prepare the Base:
    In the same skillet, sauté onions and garlic until softened.
  • Deglaze the Pan:
    Add red wine (if using) to the skillet to deglaze, scraping up any.browned bits. Simmer for 2 minutes.
  • Assemble Ingredients:
    Place the seared roast in a large Dutch oven or slow cooker. Add the sautéed onions, garlic, carrots, celery, and potatoes. Pour in beef broth and the deglazed liquid
  • Add Herbs:
    Add rosemary and bay leaves to the pot.
  • Cook:
    For oven method, cover the Dutch oven and bake at 325°F (160°C) for 3 hours. For slow cooker, set on low for 6-8 hours or high for 4-5 hours.
  • Serve:
    Remove bay leaves and rosemary sprigs before serving. Slice the roast and serve with vegetables and gravy.

Notes

  • For added flavor, marinate the roast overnight with your favorite seasonings.
  • Substitute red wine with an equal amount of beef broth if preferred.
