- 2 tbsp olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cups red wine (optional)
- 4 carrots, peeled and chopped
- 3 celery stalks, chopped
- 3 large potatoes, peeled and quartered
- 2 sprigs fresh rosemary
- 2 bay leaves
- Salt and pepper, to taste
Prep the Roast: Pat the arm roast dry with paper towels. Season generously with salt and pepper on all sides. Sear the Roast: Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned. Remove and set aside. Prepare the Base: In the same skillet, sauté onions and garlic until softened. Deglaze the Pan: Add red wine (if using) to the skillet to deglaze, scraping up any.browned bits. Simmer for 2 minutes. Assemble Ingredients: Place the seared roast in a large Dutch oven or slow cooker. Add the sautéed onions, garlic, carrots, celery, and potatoes. Pour in beef broth and the deglazed liquid Add Herbs: Add rosemary and bay leaves to the pot. Cook: For oven method, cover the Dutch oven and bake at 325°F (160°C) for 3 hours. For slow cooker, set on low for 6-8 hours or high for 4-5 hours. Serve: Remove bay leaves and rosemary sprigs before serving. Slice the roast and serve with vegetables and gravy.
