Ingredients
  

For the Chicken

  • 3 lb (1.4 kg) bone-in, skin-on chicken thighs and drumsticks
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice

For the Jerk Marinade

  • 2–3 Scotch bonnet peppers
  • 4 scallions, roughly chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fresh thyme leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon vegetable oil

Instructions
 

Prepare the Chicken

  • Pat the chicken pieces thoroughly dry with paper towels.
    Make 2–3 shallow cuts in the thickest parts of each piece. This allows the marinade to penetrate deeper and encourages more even cooking.

Make the Jerk Marinade

  • Add Scotch bonnet peppers, scallions, garlic, ginger, thyme, allspice, smoked paprika, black pepper, salt, cinnamon, nutmeg, brown sugar, soy sauce, Worcestershire sauce, lime juice, orange juice, vinegar, and oil to a blender or food processor.
    Blend until you have a thick, aromatic marinade.

Marinate the Chicken

  • Place the chicken in a large bowl or food-safe resealable bag.
    Pour the marinade over the chicken and massage it thoroughly into the pieces, paying particular attention to the cuts.
    Cover and refrigerate for at least 4 hours. For maximum flavor, marinate overnight.

Bring the Chicken Toward Room Temperature

  • Remove the chicken from the refrigerator approximately 20 minutes before baking.
    This helps it cook more evenly.

Arrange the Chicken

  • Place the marinated chicken pieces skin-side up on the prepared rack.
    Shake off excessive marinade, but leave enough coating on the chicken to create a flavorful crust.
    Discard any marinade that has been in contact with raw chicken unless it is boiled thoroughly before reuse.

Bake

  • Bake the chicken for approximately 35–45 minutes, depending on the size of the pieces.
    The chicken should become deeply browned and caramelized.

Check for Doneness

  • The thickest portion of the chicken should reach at least 165°F (74°C) on an instant-read thermometer.
    For dark-meat chicken, cooking somewhat beyond this temperature can produce a more tender texture, provided the chicken isn't dried out.

Rest and Serve

  • Remove the chicken from the oven and allow it to rest for 5–10 minutes.
    Garnish with fresh scallions and thyme.
    Serve hot with Jamaican rice and peas, fried plantains, steamed cabbage, festival, or a fresh salad.

Notes

  • Bone-in chicken thighs and drumsticks are excellent choices because they stay juicy during baking.
  • Scotch bonnet peppers can be extremely hot, so adjust the quantity carefully.
  • Removing the seeds and membranes can reduce some of the heat.
  • Marinating overnight provides deeper flavor.
  • Don't place the chicken too close together on the baking sheet.
  • A wire rack helps heat circulate and improves browning.
  • Watch carefully during broiling because the sugar in the marinade can burn.
  • Always verify doneness using an instant-read thermometer.
