- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tbsp coarse salt
- 1/2 tsp black pepper
- Optional toppings: butter, sour cream, shredded cheese, chives, bacon bits
Preheat the oven to 425°F (220°C).
Scrub the potatoes thoroughly under running water and dry them with a towel.
Poke each potato several times with a fork to allow steam to escape.
Rub each potato with olive oil and sprinkle evenly with salt and black pepper.
Place the potatoes directly on the oven rack for even baking, or on a baking sheet for easy cleanup.
Bake for 50-60 minutes, or until the skin is crispy and a fork slides easily into the center.
Remove from the oven and let them rest for 5-10 minutes before slicing open.
