Ingredients
  

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tbsp coarse salt
  • 1/2 tsp black pepper
  • Optional toppings: butter, sour cream, shredded cheese, chives, bacon bits

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Scrub the potatoes thoroughly under running water and dry them with a towel.
  • Poke each potato several times with a fork to allow steam to escape.
  • Rub each potato with olive oil and sprinkle evenly with salt and black pepper.
  • Place the potatoes directly on the oven rack for even baking, or on a baking sheet for easy cleanup.
  • Bake for 50-60 minutes, or until the skin is crispy and a fork slides easily into the center.
  • Remove from the oven and let them rest for 5-10 minutes before slicing open.
  • Serve with your favorite toppings and enjoy!

Notes

  • For extra crispy skin, bake the potatoes on a wire rack.
  • Avoid wrapping the potatoes in foil, as this traps moisture and prevents crisping.
  • Use russet potatoes for the best texture and fluffiness.
