Ingredients
  

  • 2 lbs new red potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried rosemary (or fresh, chopped)
  • 1/2 tsp smoked paprika (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the red potatoes, then cut them in half.
  • In a large mixing bowl, toss the potatoes with olive oil, salt, black pepper, garlic powder, onion powder, rosemary, and smoked paprika.
  • Spread the potatoes evenly on a baking sheet, ensuring they are in a single layer.
  • Roast for 35 minutes, flipping halfway through, until they are golden brown and crispy.
  • Remove from the oven and let them rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For extra crispiness, place the baking sheet in the oven while it preheats, then add the seasoned potatoes to the hot pan.
