Instructions
Preheat your oven to 400°F (200°C).
Wash and dry the red potatoes, then cut them in half.
In a large mixing bowl, toss the potatoes with olive oil, salt, black pepper, garlic powder, onion powder, rosemary, and smoked paprika.
Spread the potatoes evenly on a baking sheet, ensuring they are in a single layer.
Roast for 35 minutes, flipping halfway through, until they are golden brown and crispy.
Remove from the oven and let them rest for 5 minutes.
Garnish with fresh parsley before serving.
Notes
For extra crispiness, place the baking sheet in the oven while it preheats, then add the seasoned potatoes to the hot pan.
