For the Tilapia
- 4 tilapia fillets
- 3 tablespoons pesto sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon lemon juice
For the Orzo
- 1 cup orzo pasta
- 2 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 clove garlic (minced)
For the Vegetables
- 1 zucchini (sliced)
- 1 bell pepper (chopped)
- 1 cup cherry tomatoes
- 1/2 cup broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
Heat olive oil in a pan and sauté garlic until fragrant.Add orzo and lightly toast for 1–2 minutes.Pour in broth and cook until tender and liquid is absorbed
Toss vegetables with olive oil, salt, and pepper.Roast in a preheated oven at 200°C (400°F) for 15–20 minutes or sauté until tender.
Season tilapia with salt, pepper, and lemon juice.Heat olive oil in a pan and cook fillets for 3–4 minutes per side.Spread pesto over the fish during the last minute of cooking.
Place a serving of orzo on a plate.Top with tilapia fillet.Add roasted vegetables on the side or mix into the orzo.
Serve warm and garnish with fresh herbs if desired.
