Ingredients
  

For the Tilapia

  • 4 tilapia fillets
  • 3 tablespoons pesto sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon lemon juice

For the Orzo

  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)

For the Vegetables

  • 1 zucchini (sliced)
  • 1 bell pepper (chopped)
  • 1 cup cherry tomatoes
  • 1/2 cup broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a pan and sauté garlic until fragrant.Add orzo and lightly toast for 1–2 minutes.Pour in broth and cook until tender and liquid is absorbed
  • Toss vegetables with olive oil, salt, and pepper.Roast in a preheated oven at 200°C (400°F) for 15–20 minutes or sauté until tender.
  • Season tilapia with salt, pepper, and lemon juice.Heat olive oil in a pan and cook fillets for 3–4 minutes per side.Spread pesto over the fish during the last minute of cooking.
  • Place a serving of orzo on a plate.Top with tilapia fillet.Add roasted vegetables on the side or mix into the orzo.
  • Serve warm and garnish with fresh herbs if desired.

Notes

  • Fresh pesto gives the best flavor, but store-bought works well too.
  • Tilapia can be baked instead of pan-fried.
