- 3 lbs pork shoulder (or pork butt)
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 tsp red pepper flakes (optional)
- 1 cup chicken broth
- ½ cups white wine (optional)
- 2 cups sautéed broccoli rabe or spinach
- 6 slices provolone cheese
- 6 crusty Italian rolls
- 1 tbsp butter (for toasting rolls)
Preheat oven to 300°F (150°C).
Rub the pork shoulder with olive oil, garlic, salt, black pepper, oregano, and red pepper flakes.
Place the pork in a roasting pan and pour chicken broth and white wine around it.
Cover with foil and roast for about 3 hours or until fork-tender.
While the pork is cooking, sauté the broccoli rabe or spinach in olive oil with garlic.
Once the pork is cooked, let it rest for 10 minutes before slicing or shredding.
Toast the Italian rolls with butter in a pan.
Layer each roll with shredded pork, sautéed greens, and a slice of provolone cheese.
Serve hot and enjoy!
