Ingredients
  

Main Ingredients:

  • 2 large unripe green mangoes, peeled and sliced
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 tbsp salt

Spices:

  • 1 tsp mustard seeds
  • 1 tsp chili flakes
  • 1 tsp turmeric powder
  • 2 garlic cloves, sliced (optional)

Instructions
 

Prepare the Mangoes:

  • Peel and slice the mangoes into thin strips or bite-sized pieces. Set aside.

Make the Pickling Brine:

  • In a small saucepan, combine vinegar, water, sugar, and salt. Heat over medium heat until the sugar dissolves completely.

Add the Spices:

  • Stir in mustard seeds, chili flakes, turmeric powder, and garlic slices. Let the mixture simmer for 1 minute to release the flavors.

Combine Mango and Brine:

  • Place the sliced mangoes in a clean, sterilized jar. Pour the hot brine over the mangoes, ensuring they are fully submerged.

Rest and Cool:

  • Let the jar cool to room temperature, then seal it tightly and refrigerate for at least 1 hour before serving.

Notes

For the best flavor, allow the pickled mango to rest in the refrigerator for 24 hours before consuming.
