Pineapple Chicken and Rice Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (cubed)
  • 1 cup jasmine rice (or basmati rice)
  • 1 1/2 cup chicken broth
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 2 soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger (grated)
  • 2 cloves garlic (minced)
  • 1/2 tsp black pepper
  • 1/2 tsp red chili flakes (optional)
  • 1 tbsp olive oil
  • 1/2 cup bell peppers (chopped)
  • 2 green onions (sliced, for garnish)
  • Sesame seeds (for garnish)

Instructions
 

  • Heat olive oil in a large pan over medium heat.
  • Add cubed chicken, season with black pepper, and cook until golden brown.
  • Add garlic and ginger, sauté for 1 minute until fragrant.
  • Stir in bell peppers and cook for another 2 minutes.
  • In a bowl, mix pineapple juice, soy sauce, honey, and rice vinegar.
  • Pour the sauce into the pan and stir well.
  • Add rice and chicken broth, then bring to a boil.
  • Reduce heat to low, cover, and let it simmer for 18-20 minutes until rice is tender.
  • Stir in pineapple chunks and cook for another 2 minutes.
  • Garnish with green onions and sesame seeds. Serve hot!

Notes

  • Use fresh pineapple for the best flavor, but canned works well too.
  • Adjust sweetness by adding more or less honey.
