- 2 boneless, skinless chicken breasts (cubed)
- 1 cup jasmine rice (or basmati rice)
- 1 1/2 cup chicken broth
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup pineapple juice
- 2 soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp ginger (grated)
- 2 cloves garlic (minced)
- 1/2 tsp black pepper
- 1/2 tsp red chili flakes (optional)
- 1 tbsp olive oil
- 1/2 cup bell peppers (chopped)
- 2 green onions (sliced, for garnish)
- Sesame seeds (for garnish)
Heat olive oil in a large pan over medium heat.
Add cubed chicken, season with black pepper, and cook until golden brown.
Add garlic and ginger, sauté for 1 minute until fragrant.
Stir in bell peppers and cook for another 2 minutes.
In a bowl, mix pineapple juice, soy sauce, honey, and rice vinegar.
Pour the sauce into the pan and stir well.
Add rice and chicken broth, then bring to a boil.
Reduce heat to low, cover, and let it simmer for 18-20 minutes until rice is tender.
Stir in pineapple chunks and cook for another 2 minutes.
Garnish with green onions and sesame seeds. Serve hot!

Use fresh pineapple for the best flavor, but canned works well too.

Adjust sweetness by adding more or less honey.
