Ingredients
  

  • 8 small tortillas (corn or wheat)
  • 1 cup cooked black beans
  • 1 cup diced mushrooms
  • 1 small onion (chopped)
  • 1 tomato (chopped)
  • 1 cup shredded lettuce
  • 1 avocado (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • ½ teaspoon black pepper
  • Fresh coriander leaves

Instructions
 

  • Heat olive oil in a pan over medium heat.Add chopped onions and sauté until soft.
  • Heat tortillas on a skillet.Warm each side for about 30 seconds.
  • Sprinkle coriander leaves.Drizzle lemon juice.
  • Place filling on tortillas.Add lettuce and tomatoes.Add avocado slices.
  • Add chopped onions and sauté until soft.Add mushrooms and cook for 4–5 minutes.Stir in black beans
  • Add cumin, chili powder, salt, and pepper.Cook for 3 minutes.
