Porcupine meatballs are tender beef meatballs mixed with rice and simmered in a savoury tomato sauce. As the rice cooks inside the meat, it creates a unique texture that makes the dish both hearty and flavourful. It’s a budget-friendly, one-pot meal that pairs perfectly with mashed potatoes, vegetables, or pasta.

- 1 lb ground beef
 - ½ cup uncooked long-grain rice
 - 1 small onion, finely chopped
 - 1 egg
 - 2 tablespoons parsley, chopped
 - 1 teaspoon salt
 - ½ teaspoon black pepper
 - 2 cups tomato sauce
 -   1 cup beef broth
 
 
In a bowl, combine ground beef, rice, onion, egg, parsley, salt, and pepper. Mix well.
Shape into small meatballs and place in a baking dish or skillet.
In another bowl, mix tomato sauce with beef broth and pour over the meatballs.
Cover and bake at 350°F (175°C) for 40–45 minutes, or simmer on the stovetop until meatballs are cooked and rice is tender.
Serve hot with your choice of side dishes.
