Porcupine meatballs are tender beef meatballs mixed with rice and simmered in a savoury tomato sauce. As the rice cooks inside the meat, it creates a unique texture that makes the dish both hearty and flavourful. It’s a budget-friendly, one-pot meal that pairs perfectly with mashed potatoes, vegetables, or pasta.

Ingredients
  

  • 1 lb ground beef
  • ½ cup uncooked long-grain rice
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tablespoons parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups tomato sauce
  • 1 cup beef broth

Instructions
 

  • In a bowl, combine ground beef, rice, onion, egg, parsley, salt, and pepper. Mix well.
  • Shape into small meatballs and place in a baking dish or skillet.
  • In another bowl, mix tomato sauce with beef broth and pour over the meatballs.
  • Cover and bake at 350°F (175°C) for 40–45 minutes, or simmer on the stovetop until meatballs are cooked and rice is tender.
  • Serve hot with your choice of side dishes.

Notes

  • Use lean ground beef for healthier results.
  • Ensure rice is uncooked when mixing so it softens during cooking.
