Ingredients

  • 250 g Portuguese chouriço sausage, sliced into rounds
  • 1 cup long-grain white rice, rinsed
  • 1 can (about 400 g) red kidney beans or white beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 1 cup chopped tomatoes or canned crushed tomatoes
  • 2 tablespoons olive oil
  • 2½ cups chicken or vegetable broth, approximately
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes, optional
  • ½ teaspoon black pepper
  • Salt, to taste
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, optional, for serving

Instructions

  • Slice the chouriço into thin rounds. Finely chop the onion, mince the garlic, dice the red bell pepper, and prepare the tomatoes.
Rinse the rice under cold running water until the water becomes less cloudy. Drain the beans thoroughly and set everything aside.
  • Heat the olive oil in a large, heavy-bottomed pot or deep skillet over medium heat.
Add the sliced chouriço and cook for approximately 4–5 minutes, stirring occasionally, until the sausage begins to brown and releases some of its flavorful oils.
If your sausage releases plenty of fat, reduce the amount of additional oil as needed.
  • Add the chopped onion and diced red bell pepper to the pot. Cook for 3–4 minutes until the onion softens.
Stir in the minced garlic and cook for another 30 seconds, taking care not to burn it.
Add the smoked paprika, oregano, black pepper, and optional red pepper flakes. Stir well so the seasonings coat the sausage and vegetables.
  • Add the chopped or crushed tomatoes to the pot. Stir and cook for approximately 3–4 minutes, allowing the tomatoes to soften and blend with the sausage and spices.
This creates a flavorful base that gives the finished rice its appealing color and savory taste.
  • Stir in the rinsed rice and drained beans. Mix gently to distribute them evenly throughout the pot.
Pour in approximately 2½ cups of broth and stir once to combine. Bring the mixture to a gentle boil.
Check the seasoning before adding salt because the chouriço and broth may already contain enough sodium.
  • Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for approximately 18–22 minutes, or until the rice has absorbed the liquid and is tender.
Avoid repeatedly lifting the lid, as trapped steam helps cook the rice evenly.
If the rice is still firm and the liquid has been absorbed, add a small amount of hot broth or water and continue cooking until tender.
  • Turn off the heat and leave the pot covered for 5–10 minutes.
This resting period allows the moisture to distribute throughout the rice and helps produce a more even texture.
Remove the lid and gently fluff the rice with a fork. Avoid vigorous stirring, which can break the beans and make the rice mushy.
  • Sprinkle freshly chopped parsley over the finished dish. Add a squeeze of lemon juice if you enjoy a brighter flavor.
Serve immediately in warm bowls, either on its own or with a crisp green salad, steamed vegetables, or crusty bread.

Notes

  • Choose quality chouriço: A flavorful Portuguese sausage is the foundation of this dish.
  • Rinse the rice: This helps remove excess surface starch and may improve the texture.
  • Use canned beans for convenience: They save time and are ready to add after draining and rinsing.
  • Control the liquid: Different rice varieties and pots may require slightly different amounts of broth.
  • Avoid excessive stirring: Once the rice begins simmering, stir as little as possible.
  • Adjust the heat: Add red pepper flakes if you prefer a spicier meal.
  • Taste before salting: Chouriço and broth can make the dish salty enough without extra salt.
  • Store leftovers properly: Refrigerate within two hours in shallow, airtight containers and consume within 3–4 days.
