Ingredients
  

  • 1½ cups dried black beans (rinsed, not soaked)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 3½ cups water or vegetable broth

Instructions
 

  • Turn the Instant Pot to sauté mode and heat the olive oil.
  • Add onion and bell pepper; sauté until softened and fragrant.
  • Stir in garlic, cumin, and oregano; cook for 30 seconds.
  • Add black beans, bay leaf, salt, and water or broth.
  • Secure the lid and cook on high pressure for 35 minutes.
  • Stir in vinegar or lime juice and adjust seasoning before serving.

Notes

  • No soaking is required when using an Instant Pot.
  • Beans thicken naturally as they cool.
  • Vinegar enhances flavor and balances richness.
  • Leftovers taste even better the next day.
  • Remove the bay leaf before serving.
