- 1½ cups dried black beans (rinsed, not soaked)
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1 green bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 tablespoon olive oil
- 3½ cups water or vegetable broth
