Potato Latkes are crispy, golden potato pancakes.They are traditionally fried until perfectly crunchy.Latkes are commonly served with applesauce or sour cream.They are especially popular during Hanukkah celebrations.This dish is simple, comforting, and timeless.

Ingredients
  

  • 4 large potatoes, peeled
  • 1 medium onion
  • 2 large eggs
  • 3 tablespoons all-purpose flour or matzo meal
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • Oil for frying (vegetable or sunflower oil)

Instructions
 

  • Grate the potatoes and onion using a box grater or food processor.
  • Place the mixture in a clean towel and squeeze out excess moisture.
  • Transfer to a bowl and mix with eggs, flour, salt, and pepper.
  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the mixture into hot oil and flatten slightly.
  • Fry until golden brown on both sides, about 3–4 minutes per side.
  • Drain on paper towels and serve hot.

Notes

  • Removing excess moisture ensures crisp latkes.
  • Oil should be hot before frying.
  • Do not overcrowd the pan.
  • Latkes crisp up more as they cool slightly.
  • Best enjoyed fresh and hot.
