Ingredients
  

For the Soda Bread:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 ½ cups buttermilk

For the Potato Filling:

  • 2 cups mashed potatoes (warm)
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • Salt and pepper to taste
  • 2 tbsp chopped green onions

For the Shepherd’s Gravy:

  • 1 tbsp olive oil
  • 250 g ground lamb or beef
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh herbs (thyme or parsley)

Instructions
 

  • Mix mashed potatoes with butter, milk, salt, pepper, and green onions.Set aside and keep warm.
  • Preheat oven to 200°C (400°F).In a bowl, combine flour, baking soda, salt, and sugar.Gradually add buttermilk and mix into a soft dough.
  • Divide dough into two portions.Flatten one portion and spread the potato filling evenly.Cover with the second portion and seal edges well.Place on a baking tray and score lightly on top.
  • Bake for 35–40 minutes until golden brown.Cool slightly before slicing.
  • Heat oil in a pan and cook ground meat until browned.Add onion and garlic, sauté until soft.Stir in tomato paste and flour.Pour in broth and Worcestershire sauce.Simmer until thickened.Season and add herbs.
  • Slice the stuffed soda bread.Serve hot with generous spoonfuls of gravy.
