For the Soda Bread:
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tbsp sugar
- 1 ½ cups buttermilk
For the Potato Filling:
- 2 cups mashed potatoes (warm)
- 2 tbsp butter
- 2 tbsp milk or cream
- Salt and pepper to taste
- 2 tbsp chopped green onions
For the Shepherd’s Gravy:
- 1 tbsp olive oil
- 250 g ground lamb or beef
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (thyme or parsley)
Mix mashed potatoes with butter, milk, salt, pepper, and green onions.Set aside and keep warm.
Preheat oven to 200°C (400°F).In a bowl, combine flour, baking soda, salt, and sugar.Gradually add buttermilk and mix into a soft dough.
Divide dough into two portions.Flatten one portion and spread the potato filling evenly.Cover with the second portion and seal edges well.Place on a baking tray and score lightly on top.
Bake for 35–40 minutes until golden brown.Cool slightly before slicing.
Heat oil in a pan and cook ground meat until browned.Add onion and garlic, sauté until soft.Stir in tomato paste and flour.Pour in broth and Worcestershire sauce.Simmer until thickened.Season and add herbs.
Slice the stuffed soda bread.Serve hot with generous spoonfuls of gravy.
