For the Potstickers
- 24 round dumpling or gyoza wrappers
- 1/2 pound ground pork
- 1 cup finely shredded green cabbage
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, finely grated
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt, or to taste
- 1 tablespoon cornstarch
- 1/3 cup water, for steaming
For the Dipping Sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili oil or chili crisp
- 1/2 teaspoon sesame seeds
Place the ground pork in a large mixing bowl. Add the shredded cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, black pepper, salt, and cornstarch.
Mix everything thoroughly until the ingredients are evenly distributed and the mixture becomes slightly sticky.
Place the dumpling wrappers on a clean surface. Keep the unused wrappers covered with a slightly damp kitchen towel so they don't dry out.Place approximately 1 tablespoon of filling in the center of each wrapper. Dip your fingertip in water and lightly moisten the outer edge of the wrapper.
Fold the wrapper over the filling to create a half-moon shape. Press the edges firmly together to seal.
You can leave them as simple half-moon dumplings or create traditional pleats along the top edge.
Arrange the potstickers in the pan flat-side down, leaving a little space between them.
Carefully pour about 1/3 cup water into the skillet and immediately cover it with a lid.
Remove the lid and allow any remaining water to evaporate.
Combine soy sauce, rice vinegar, sesame oil, chili oil, green onion, and sesame seeds in a small bowl.
Mix well and serve alongside the hot potstickers.
- Do not overfill the wrappers: Too much filling can cause the dumplings to burst while cooking.
- Keep wrappers covered: Dumpling wrappers dry quickly when exposed to air.
- Use moderate heat: Excessively high heat can burn the bottoms before the filling cooks.
- Don't overcrowd the pan: Give the dumplings enough room to brown evenly.
- Be careful when adding water: Oil and water can splatter, so add the water carefully and immediately cover the pan.
- Check the pork: The filling should be completely cooked before serving.
- Serve immediately: Potstickers are best when their bottoms are still hot and crispy.
- Adjust the dipping sauce: Add more chili oil for heat or extra rice vinegar for a sharper flavor.
