For the Potstickers
- 30 round dumpling wrappers
- 1 pound ground pork
- 2 cups finely shredded green cabbage
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, finely grated
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Cooking
- 1½ tablespoons neutral cooking oil
- ½ cup water
For the Dipping Sauce
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili crisp or chili oil, optional
- 1 teaspoon honey or sugar
- 1 teaspoon finely grated fresh ginger
- 1 green onion, finely sliced
Place the shredded cabbage in a bowl and sprinkle lightly with salt. Let it sit for about 10 minutes. Squeeze out excess moisture using clean hands or a kitchen towel. This prevents watery filling.
In a large bowl, combine the ground pork, cabbage, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, sugar, salt, and pepper.Mix gently until everything is evenly incorporated. Avoid overmixing because it can make the filling dense. Keep the dumpling wrappers covered with a slightly damp kitchen towel while working so they don't dry out.Place one wrapper in your palm or on a clean work surface. Place approximately 1 tablespoon of filling in the center of each wrapper.Avoid overfilling because it makes sealing difficult. Moisten the edge of the wrapper with a little water. Fold the wrapper over the filling to create a half-moon shape.Press the edges firmly together. You can create pleats along one side for a traditional appearance.Repeat until all the filling is used. Place a large nonstick or well-seasoned skillet over medium-high heat.Add the cooking oil and arrange the dumplings flat-side down without overcrowding the pan. Cook for approximately 2–3 minutes, or until the bottoms become golden brown and crisp.
Carefully pour approximately ½ cup water into the pan and immediately cover with a lid.Steam for 6–8 minutes, or until the filling is completely cooked and the wrappers are tender. Take off the lid and allow any remaining water to evaporate.Continue cooking for another 1–2 minutes so the bottoms become crisp again. Combine soy sauce, rice vinegar, sesame oil, chili oil, honey, ginger, and green onion in a small bowl.Taste and adjust the seasoning according to your preference. Transfer the hot potstickers to a serving plate with the crispy side facing upward.Serve immediately with the dipping sauce.
