  • 4 chicken thighs (bone-in, skin-on)
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • 4 garlic cloves (minced)
  • ½ cup red wine vinegar
  • ½ cup dry white wine
  • 1 cup chicken stock
  • 2 tablespoons tomato paste
  • 2 tablespoons butter
  • Fresh parsley (for garnish)

Instructions
 

  • Season the chicken generously with salt and pepper.
  • Heat olive oil in a large pan over medium heat.
  • Sear the chicken skin-side down until golden brown, then flip and cook the other side. Remove and set aside.
  • In the same pan, sauté shallots and garlic until fragrant.
  • Pour in white wine and let it reduce slightly.
  • Stir in tomato paste and chicken stock.
  • Return chicken to the pan and simmer for 20–25 minutes until cooked through.
  • Remove chicken and whisk butter into the sauce.
  • Return chicken to the pan, garnish with parsley, and serve hot.
