Ingredients

For the Pizza

  • 1 sheet frozen puff pastry, thawed
  • ½ cup marinara or pizza sauce
  • 8 ounces (225 g) fresh mozzarella cheese, sliced
  • 2 medium ripe tomatoes, thinly sliced
  • ¼ cup freshly grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Fresh basil leaves
  • ½ teaspoon dried oregano
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Egg Wash

  • 1 large egg
  • 1 tablespoon water

Optional Toppings

  • Cherry tomatoes
  • Crushed red pepper flakes
  • Balsamic glaze
  • Fresh arugula
  • Garlic-infused olive oil

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  • Roll the thawed puff pastry slightly to smooth the surface.
  • Transfer the pastry to the prepared baking tray.
  • Using a knife, lightly score a ½-inch border around the edges without cutting all the way through.
  • Prick the center of the pastry several times with a fork to reduce excessive puffing.
  • Brush the border with the egg wash.
  • Spread the marinara sauce evenly over the center, leaving the border uncovered.
  • Arrange the mozzarella slices evenly over the sauce.
  • Top with the tomato slices and sprinkle with Parmesan cheese, oregano, salt, and black pepper.
  • Drizzle with olive oil.
  • Bake for 16–18 minutes, or until the pastry is golden brown and the cheese is bubbling.
  • Remove from the oven and allow the pizza to cool for 2–3 minutes.
  • Top with fresh basil leaves and drizzle with balsamic glaze, if desired.
  • Slice and serve immediately while warm.

Notes

  • Thaw the puff pastry completely before using.
  • Fresh mozzarella provides the best creamy texture.
  • Pat the tomato slices dry to prevent a soggy crust.
  • Don't overload the pastry with toppings.
  • Fresh basil should be added after baking.
  • Score the border for an attractive raised crust.
  • Use homemade marinara for the richest flavor.
  • Refrigerate leftovers in an airtight container for up to 2 days.
