Ingredients
  

  • 3 cups pulled pork (leftover or fresh)
  • 2 cups cooked pasta or mashed potatoes
  • 1 cup barbecue sauce
  • 1 small onion, chopped
  • 1 cup corn kernels (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup mozzarella cheese
  • ½ cup sour cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Heat olive oil in a skillet. Add chopped onion and sauté until translucent.
  • Combine pulled pork with barbecue sauce, sour cream, smoked paprika, and garlic powder in a large bowl.
  • Add cooked pasta or mashed potatoes to the pork mixture and stir gently until evenly coated.
  • Layer the mixture into the baking dish, spreading it evenly.
  • Top with shredded cheddar and mozzarella cheese.
  • Bake for 25–30 minutes or until the cheese is melted and bubbly.
  • Garnish with parsley and serve warm.
