Ingredients
  

  • 2 cups rolled oats
  • 1 cup pumpkin purée
  • 2 large eggs
  • 1 ¾ cups milk
  • ¼ cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup chopped nuts or chocolate chips (optional)

Instructions
 

  • Preheat oven to 350°F. Grease a baking dish.
  • Combine oats, baking powder, salt, and spices in a bowl.
  • Mix pumpkin, milk, eggs, maple syrup, and vanilla in another bowl.
  • Stir the wet ingredients into the dry ingredients.
  • Fold in nuts or chocolate chips if using.
  • Pour into the baking dish and spread evenly.
  • Bake for 35 minutes until set and golden.
  • Let it rest before slicing and serving.

  • Use steel-cut oats only if par-cooked first.
  • Replace milk with almond milk for a dairy-free version.
